    北京爆肚

    和四川的辣兔头一样,爆肚也是响彻民间和街头巷尾的名小吃。
    记得2002年刚来BJ的时候,郑英小哥就带我去了西单XXX小饭馆吃爆肚,他说来了北京不吃爆肚就太痛心了...可惜西单那家贼好吃的小店我已经完全不知道怎么走了,但是爆肚的味道却留在我脑海中。
     
    第一次听到“爆肚”的名字,以为是油锅里炸锅,爆过后的产物,后来真正动筷才知原来是水中一窜便可享用的玩意,这爆肚的好滋味一是其本身的品质,而是配合爆肚的酱料非常重要.....
     
    大前天晚上,去了老字号“西德顺”,号称店主爷爷的爷爷技满京城,硬是把这街边小吃搬上了大雅之堂,行吧,赶紧点菜,一看菜单,上面除了爆肚和羊肉做的几样小菜,其他没有.....真是老字号专营店。那就爆肚,麻饼,羊杂汤...
    真是百吃不厌的爆肚,有点脆,配合着酱料,一会儿功夫盘子就见了底,羊杂汤就更秒了,居然让我想起了很小的时候,在妈妈工厂附近配着生煎吃的鸭血粉丝汤....
     
    我爱北京爆肚!!
     
    另:西德顺的酱料偏咸;东来顺的爆肚也非常不错,更适合南方口味
